मित्रों एक बहुत ही पुरानी कहावत है, " न रहेगा बांस, न बजेगी बांसुरी " । इसका अर्थ यह है कि, जो भी समस्या है उसे जड़ से समाप्त कर दिया जाय। वैसे यह कहावत याद आते ही हमें बांसुरी नहीं बांस ध्यान में आता है। अपने असीमित गुणों के कारण बांस के उपर यह कहावत बनी है। इसके चमत्कारी गुणों के बारे में सभी लोग जानते हैं। पर इसे खाद्य के लिए भी इस्तेमाल किया जाता है, यह बहुत ही कम लोग जानते हैं। तो चलिए हम आपको बताते हैं कि यह हमारे देश में इसे कहां कहां इस्तेमाल करते हैं।
हमारे देश में नागालैंड, मिजोरम, मेघालय, मणिपुर, त्रिपुरा, असम, सिक्किम और बंगाल में बांस ( बांस की कोपल ) को बड़े ही चाव से खाया जाता है। ओडिशा, झारखंड, महाराष्ट्र, कर्नाटक और केरल में भी बांस की कोपल को अनेक प्रकार से खाते और खिलते हैं। वहां पर इसे ' करडी ' नाम से जाना जाता है। नेपाल में बांस की कोपल को ' तामा ' नाम से जाना जाता है। ये बांस की कोपालें वहां की पारंपरिक व्यंजन है। जो हमेशा इस्तेमाल में आती रहती हैं। कहीं पर इन्हें उबाल कर ताजे मक्खन के साथ इस्तेमाल किया जाता है, तो कहीं पर खमीर चढ़ाने के बाद विशेष स्वाद के लिए इसतेमाल किया जाता है। कहीं पर ये कोपलें तरी के साथ दिखाई देती हैं, तो कहीं पर सुखी तली सब्जी के रूप में। बीन तथा सीताफल के डंठल और फूल के साथ इसकी अच्छी बनती है। मांसाहारी व्यंजनों में, मछली मुर्गा आदि के साथ भी इसकी सब्जी बढ़िया बनती है। बांस का अचार, मुरब्बा और सब्जी इत्यादि बनते हैं। इसे खाने से बच्चों की लंबाई बढ़ती है, तथा बड़ों को ताकत मिलती है। इस तरह देश के अनेक हिस्सों में इसे अलग अलग तरह से इसतेमाल किया जाता है।
कुछ समय पहले तक ये बांस की कोपले वहीं मिलती थी जहां जहां इनकी खेती होती थी, यह सभी जगह उपलब्ध नहीं होती थी। इसके शौकीन लोग टिन के डिब्बों में, नमक के घोल में संरक्षित कोपलों का प्रयोग करते थे। परंतु आज इसकी मांग बढ़ने के कारण लगभग सभी जगह पाउच में उपलब्ध हैं। आप इसे लाकर इस्तेमाल कर सकते हैं।
दोस्तों अब बात करते हैं इसकी खेती की। तो इसकी रोपाई जुलाई से अक्टूबर महीने के अंदर की जाती है। यह घास की कैटेगरी में आने वाली वनस्पति है। और यह विश्व में सबसे तेजी से बढ़ने वाली घास है। यह एक दिन में लगभग 1 मीटर तक बढ़ सकती है। पूरे विश्व में बांस की कुल 1250 प्रजातियां पाई जाती हैं, जिसमें से हमारे देश में कुल 136 प्रजातियां पाई जाती हैं। हमारे देश में नागालैंड, मिजोरम, मेघालय, मणिपुर, त्रिपुरा, असम, सिक्किम बंगाल, ओडिशा, झारखंड, महाराष्ट्र, कर्नाटक और केरल में इसकी खेती होती है। पूरे विश्व में चाइना में इसकी खेती सबसे ज्यादा होती है। यदि वैज्ञानिक तरीके से इसकी खेती की जाए, तो वह किसान भाईयो को आर्थिक रूप से समृद्ध बना सकती है। बांस के पौधे को बंजर जमीन पर लगाना चाहिए। क्योंकि एक बार पौधा लगा दिया तो 40 से 45 वर्षों तक फसल मिलती रहती है। कुछ प्रजातियां तो ऐसी है जो 70 से 90 वर्षों तक फसल देती हैं।
बांस के पूरे जीवन काल में केवल एक बार ही पुष्प लगते हैं। जो इसके मरने के संकेत देते हैं। इसलिए मनुष्य भी अपने जीवन में केवल एक बार ही बांस के फूल देख सकता है। एक और खास बात! जब हम जन्म लेते हैं तब बांस से बनी सूप में हमें पहली बार रखा जाता है। और जब जीवन लीला समाप्त होती है, तब बांस के बने जहाज में सवार हो कर ही हम अपनी अंतिम यात्रा पर जाते है। यह एक ऐसी सच्चाई है जिसे कोई भी अस्वीकार नहीं कर सकता। यही जीवन का सत्य है।
